His creations recall contemporary paintings while seeking to maintain Italian gastronomic tradition. “My aim is to enhance the existing product. I have great respect for the ingredients.” Many of the products used by his team of 32 cooks, come from Il San Pietro’s vegetable garden or from local growers.
