After distinguishing herself at Le Crillon, and Epicure at Le Bristol, chef Virginie Basselot came to this supremely elegant restaurant in Hotel St James in 2012, won her own Michelin star, and became only the second female chef to gain the coveted MOF award (Meilleur Ouvrier de France). Seasonality is king for Virginie — typical dishes might be cod with seasonal vegetables or lamb with artichokes, olives and anchovies.
